The Champagne region is the only wine region in the world where Rosé may be made by adding red wine—produced in Champagne from Champagne grapes. The challenge of adding (young) Pinot Noir to a fresh Champagne is the potential for tannins and bitterness. By using only 6% of our own Premier Cru Pinot Noir, we create a Rosé that is fresh on the palate, followed by beautiful notes of strawberry and raspberry, without any unpleasant tannins or bitterness.

Aged horizontally for 30 months in our cellars, and an additional 6 months after dégorgement.

Some dishes are so carefully composed that they naturally call for Champagne. This is certainly true for this signature creation from Restaurant LaGrange in Buren.

The chef serves Carabineros, dressed with olive oil, accompanied by a mousse of vadouvan, sushi rice, a crispy Dutch shrimp, and a surprising element: ice cream of citrus and yellow curry. The dish plays with contrasts – creamy and fresh, soft and crunchy, refined and intense – resulting in an explosion of flavors.

Our fresh Rosé Champagne pairs seamlessly with this. Its lively freshness and expressive red fruit notes balance the spicy depth of the vadouvan and the delicate sweetness of the Carabineros. The citrus in the Champagne finds a beautiful harmony with the yellow curry ice cream, while the mousse and fine bubbles add elegance and tension.
