This Rosé Champagne is crafted to highlight the expression of red fruit. It opens with a bright, fresh palate, followed by abundant fruitiness. The added red wine, also of Premier Cru quality, creates a harmonious blend where red fruit takes center stage—without any added sugar.

Gastronomically, it pairs beautifully with a variety of dishes, yet it also makes a fantastic aperitif.

Like every Champagne from Courtier, this Rosé matures for a minimum of 36 months in our cellars. Beautiful red-pink color, soft mousse, vibrant freshness, followed by pronounced red fruit.

One of their signature dishes is the Irish Mór oyster: a soft, creamy oyster.

It is delicately topped with a beurre blanc enriched with Vin Jaune, which adds a subtle spiciness. The dish is then finished with a powder made from roasted spring onions, bringing refined smokiness and depth of flavor. For balance and freshness, a kalamansi gel is added, whose citrusy acidity cuts through the richness of the oyster and the sauce.

This dish pairs perfectly with the Courtier x The Lemon Tree Champagne Premier Cru Rosé: a Champagne with greater intensity and body. Its complex fruit notes harmonize beautifully with the acidity of the kalamansi, while the subtle fruity tones in the wine complement the roasted spring onion.
